Toad in the Hole

Serves 8
2 tablespoons of olive oil
8 sausages

Yorkshire pudding
115g (4oz) flour
A pinch of black pepper
1 egg
300ml (10fl oz) milk

Serves 96
300ml (10 fl oz) of olive oil
192 sausages

Yorkshire pudding
1.3 kg (3lb) flour
½ teaspoon black pepper
12 eggs
3.4 litres (6 pints) milk

To start the Yorkshire, sift the flour and pepper into a bowl and make a well in the centre.
Beat the eggs and add to the flour, along with half the milk.
Beat well until the batter is smooth, and then add the remaining milk.
Put to one side while the oven heats up to 220 degrees C / 425 degrees F/Gas 7.
Heat the oil in a small roasting tin on top of the stove, and add the sausages.
Bake in the preheated oven for about 10 minutes, until just browned.
Reduce the oven temperature to 200 degrees C/400 degrees F/Gas 6.
Remove the sausages from the oven and quickly pour the batter into the tin around the sausages.
Put back into the oven immediately, and bake until risen and golden brown, a further 30–35 minutes.
